1 white onion, chopped
4 medium tomatoes, chopped
2 cloves of garlic
1 dried quajillo pepper, seeds removed
6 c chicken broth
1 t oil
A large handful of tortilla chips (optional, leave out for corn free soup)
Saute the onion in oil. Add all the other ingredients. Bring to a boil, reduce to simmer and simmer for 30 minutes. Blend and serve.
